Christmas Pics, Happy New Year and Baked Penne with Chicken and Sun-Dried Tomatoes

Happy New Year everyone! Jeffrey and I got back to LA last night. We had an amazing holiday with our families! Here are some pictures from the past 2 weeks.

Every year in Ruidoso the young girls are assigned to make dinner. I am always the chef and these lovely ladys are my wonderful sous chefs. We made Fondue, Nawlins' Shrimp and Crunchy Mashed Potatos (refer to old postings to find these recipes). Our meal was a hit and very fun to make!

I made this dinner a while back and saved it to use as a blog article when I wasn't cooking. It is a delicious meal and if you double it you can freeze one meal to reheat later. If I had been smart I would have made it directly before we left town so that we could have had something for dinner last night. We had no food in the house and I ended up making some basic spagetti. Just a warning, try to have all the ingredients measured and ready to go in before you start cooking the sauce. The first time I made it I was throwing things and yelling...needless to say, Jeffrey thought something was really wrong! The second time went a lot smoother because I was ready.

Baked Penne (or Bow tie, or the fat tubes I also like) with Chicken and Sun-Dried Tomatoes1 1/2 Tb butter
1/4 pound pasta
1 tsp olive olive
1 chicken breast or 3 chicken tenders
3 Tb flour
1 clove or garlic or 1 tsp minced garlic in a jar
1 1/2 cups milk
1/4 carton sliced mushrooms
3 Tb sundried tomatoes chopped
1/2 cup shredded Italian blend cheese
1/4 cup grated parmesan cheese
salt and pepper

Boil pasta until just short of being done

Salt and pepper your chicken, Grill on your grill pan and then chop into bite sized pieces.


Melt butter in a sauce pan, cook garlic for about 1 minute.

Whisk in flour and cook for one minute.

Continue whisking and gradually add milk.

Continue whisking and gradually bring to a simmer
Add mushrooms and sundried tomatoes cook for 1 min.

Turn off heat and stir in shredded cheese and 1/2 of the parmesan

Stir pasta and chicken into cheese sauce.

Spray a baking dish, pour pasta in the dish.

Sprinkle remainder of parmesan on top of the pasta
Bake in the oven on 400 for about 25 minutes or until top is golden and bubbly.
