I know many of you have been wondering where my lemon chicken recipe is... I have made it so many times that sometimes I need a break. This dish actually came from my mom's restaurant, it was one of her best selling dishes! Lemon Chicken is so easy to make and comes in handy when my refrigerator is getting slim. These ingredients are items that you can have on hand at anytime. Jeffrey loves lemon chicken, every time I would come in town when we were dating, I would make it for him.
Minute Maid Lemon Juice (Find in the frozen juice section of the grocery store. I cannot find it here in CA, so I have to use another kind which isn't as good, but works. I have to use less of it because the juice of this brand is so strong)
Grated Parmesan Cheese
Dried Minced Garlic
Frozen Chicken Tenders (I use 3 per person. I didn't have tenders so I am using chicken breasts tonight and cutting them into strips so that they will cook faster)
Make your marinade the night before you want to make this dinner.
Put whole bottle of lemon juice in the blender. Fill the bottle of lemon juice half way with olive oil.
measure 1 cap full of Lemon Pepper and 1 cap full of minced garlic in the blender
Put 1 cup of Parmesan in the blender
Blend the marinade until mixed well.
Put chicken tenders in a large Ziploc bag and pour in marinade.
Preheat your oven for 375
Put the chicken and marinade into a baking dish
Bake for 25-30 mins or until cooked through
Take out of oven and Serve over rice.
Buy Rice-a-roni Long Grain and Wild Rice box and follow the directions on the box. (1 box for every 2-3 people)
Lemon Chicken Soup
Last year my friend Lauren suggested that this recipe would be good if it was a soup, so at one of our girl's nights we created Lemon Chicken Soup! I do not have pictures of it because I didn't make it tonight, but here is the recipe.
Start by making both the lemon chicken and rice above, here is the other items that you will need.
1/2 Onion (chopped)
1/2 potato (diced)
2- 14 oz cans Chicken Broth
1 Tb Olive Olive
Baguette of Sourdough Bread
more lemon pepper and Parmesan
While your lemon chicken is cooking, put the celery, onion, potato and oil in your stockpot and cook until veggies are tender.
Take cooked chicken out of oven and cut into bite size pieces.
Pour chicken, lemon sauce and cooked wild rice into stock pot.
Pour in chicken broth and add about 1/2 Tb of lemon pepper and about 1/4 cup of Parmesan.
Cook until it comes to a boil. Reduce heat to low and serve with slices of sourdough bread (it is good for dunking!)
This soup became a favorite for girls night! Don't feel bad if you keep going back for more.
I didn't take a picture of our dinner plated tonight. I made it earlier in the day because we went to see "Up in Air" at 5:30. When we got home I reheated the food and we were so hungry I forgot to take a picture. The movie was great! Jeffrey and I both liked it. What girl wouldn't like watching George Clooney for almost 2 hours?!? There are so many movies I still need to see, "Blind Side", "Brothers", "The Princess and the Frog"... maybe while we are home for Christmas we will go see some movies! Although I doubt I will ever get Jeffrey to see Princess and the Frog, haha!
