Pizza Three Ways


Jeffrey and I had a fun weekend. Mostly, we watched movies at the house, but Saturday we drove through a light show at Griffith Park. Our friends John-Michael and Asia came over and went with us. We waited in a line of cars for over an hour to see the 1 mile stretch of lights. We were expecting greatness for all of the people that had come out for this....we were terribly disappointed!! It was a huge joke, the lights were terrible! I guess that is what you get for a free event. We did have fun though because we were with our friends making good conversation. I made Nawlin's shrimp again that night. It is a great dish to make ahead of time. I knew we would be at the light show from 5-7 so I got it ready on the baking sheet and then put it in the fridge while we were gone. When we got back all I had to do was put it under the broiler for about 10 minutes.

Pizza is one of my favorite foods. I have tried to make homemade pizza dough, and I always strike out. It usually tastes really bland when I make it. I am sure I will try again, but when you are in a pinch I love this premade crust you can buy at the grocery store. This pack comes with 2 small crusts which is perfect for Jeffrey and I. I saw on a cooking website where someone roasted garlic and spread it on the crust first, so I wanted to try that. I also saw a person use fresh mozzarella on the pizza instead of shredded cheese. Here is the list of toppings I used.

Fresh Mozzarella (I already had the small balls in my fridge so I sliced them thin, but a big ball of mozzarella would have been easier.)
Roma Tomatoes
Pesto
Garlic
Tomato Sauce
Goat Cheese
Sun dried Tomatoes
AND of course, Grilled Chicken for Jeffrey!



How to make Roasted Garlic:
Take a head of garlic and but off the top exposing the garlic inside. Drizzle olive oil in a baking pan and then set the garlic in the pan. Drizzle oil on and all around garlic head. Sprinkle salt and pepper on garlic and cover pan with aluminum foil. Cook on 375 for 45 minutes. Your house will smell divine! Take out of the oven and let cool down for about 15 minutes. Take the garlic and squeeze out the insides from the papery skin. This stuff and awesome, I had to resist eating it up by itself.



Pizza 1: Margarita
I made one whole pizza into the Margarita because I wasn't sure if we were going to like the other two, they were more experimental.
Spread pesto on the crust
Add thinly sliced tomatoes on top of the pesto.
Cover the pizza with mozzarella.

Pizza 2: Goat Cheese, Sun-dried tomatoes, and Roasted Garlic
I love the mix of Goat cheese and sun dried tomatoes! I only made half of a crust of this one, but it was probably my favorite!
Use a spoon and spread the garlic on the crust (I used it on both sides). The garlic will spread out like butter!
Put sun dried tomatoes on top of the garlic and then sprinkle goat cheese on top.

Pizza 3: Cheese Pizza with Roasted Garlic and TomatoesNext time I will leave the tomatoes off this pizza, but it was still good!
Garlic is spread on the crust. Add Tomato sauce and sliced tomatoes. Cover with mozzarella slices.

Put in the oven on 375 for about 15 minutes. The tomatoes made the pizza crust slightly wet, so I put them directly on the wire rack for the last 5 minutes and put a pan under them to catch the juice, it worked well!





These were very tasty. I love experimenting with pizza. Now I can't stop craving roasted garlic....
