Ring is Found! Fajitas and Film Festival!

After writing my blog post this morning I searched for Jeffrey's ring for over an hour and finally found it! It was on a wicker hutch in our bathroom, under his shaving bag. I praying that I would find it and kept being pushed into the the bathroom. God is good!!
Jeffrey's thesis film, Life on Earth, was selected to be in the 12th annual San Francisco Independent Film Festival! The film has now made it into 4 festivals, won the Sandhills Film Festival and is nominated for an American Society of Cinematography Award by AFI. Can you tell that am a proud wife!?!

I LOVE Mexican food! I started making these fajitas shortly after we got married. They are wonderful and taste great as leftovers.

Chicken Fajitas
2 Chicken Breasts
1/2 Onion
1 green bell pepper
1/2 carton of sliced mushrooms
vegetable oil
Tortillas (I love Mission 96% Fat Free Whole Wheat Tortillas)
Shredded Cheese
Sour Cream (optional)
Sliced avocado (optional)
Seasonings: Garlic powder, Chili Powder, Salt, Pepper, Dry Minced Onion (or Onion Powder), Cumin
1 lime

Cut raw chicken into bite sized pieces. (I forgot to do this before marinading so I did it afterward)

Marinade in juice of 1 lime and about 1/4 tsp or each of the seasonings listed above. Mix and refrigerate for at least 2 hours.

Slice onions, bell pepper and mushrooms.

Put in a bowl and season with 1/4 tsp of garlic powder, chili powder, salt, pepper and cumin, stir so that seasonings cover all over the veggies.

Cook veggies in a skillet (or cast iron skillet) with 2 Tb of oil until tender

Transfer cooked veggies to another plate

Put chicken and marinade the skillet, you may need to add more oil. Stir every few minutes until done.

Microwave tortillas for about 20-30 seconds
Fill tortillas with sour cream, cheese, avocado, chicken and veggies in the tortilla and enjoy!

I picked up this rice at the store the other day and it was the best boxed Spanish Rice I have ever tasted! You know how they usually taste funny, but this tasted like it was from a Mexican restaurant.

The countdown begins, one week until we are home for Christmas! Can't wait to see all of my family and my new extended family! Love you guys!
