Tonight I made Homemade Mac and Cheese from the Pioneer Woman Website. It was excellent, though it still doesn't top my Grandma Jenny's Homemade Mac and Cheese recipe. I need to get her recipe down on paper because I always forget what she puts in it. Anyways, the pasta tonight was great, but I decided to make the full serving, instead of splitting it, so that I would have some leftover for lunch and it made WAY too much. We will have macaroni coming out of our ears before we can finish it!
Mac and Cheese
4 cups of Macaroni Noodles
1 pd of Sharp Cheddar
2 1/2 cups milk
1/4 cup flour
1/4 cup butter
2 tsp dry mustard
Boil pasta until cooked and drain.
In a saucepan melt butter and add flour. Whisk over medium low heat for about five minutes. Do not burn!
Slowly add in the milk while whisking.
Add the mustard and cook while whisking for about 5 minutes or until it gets very thick.
In a separate bowl beat egg and then slowly whisk in 1/4 a cup of sauce.
Then pour the egg into the saucepan while whisking (Sorry there is sooo much whisking).
Add in cheese a handful at a time and stir until melted.
Season with about 1/2 tsp of salt and pepper.
Mix pasta and sauce together.
I made Protein Boy some Boiled Shrimp. I also made some Broccoli with lemon Parmesan sauce. The recipe for the lemon sauce can be found on my December 13th article about Artichokes. I use this sauce on many vegetables, it is yummy!
