Jeffrey woke up really sick yesterday morning. I had already decided to call the bridal store and tell them I was passing on the job, so I was glad I able about to nurse him all day. Things were going well until 11:30 when our power went out because of the rainstorms. There wasn't any Internet or TV. Jeffrey was comatose so I didn't have anyone to talk to. My cellphone was dying quickly so I didn't want to use it. I started reading my Kindle and then it died! Thankfully we have a gas stove so I was able to cook, but I didn't want to open the refrigerator too much. I made Baja Chicken Soup for dinner the night before, which was perfect for sick Jeffrey. As it got dark the power still wasn't on so I started lighting candles. Soon it was 8:30 and there wasn't anything to do in the dark so I just decided to go to bed. Jeffrey woke me at 11:30 to tell me the power had come back on. We are supposed to have storms the next few days and even tornadoes! I hope our power stays on.
Jeffrey's mom had given us some instant meals in our stocking for Christmas and one was the Baja Chicken Soup. It is from a company called Company's Comin'. All you do it add all the ingredients together in a pot and stir while cooking!
Baja Chicken Soup
5 cups Milk
1 8 oz block of cream cheese
1 can whole kernel corn
1 10oz can of chicken
Put all the ingredients in a stockpot and continue stirring until cream cheese is melted and soup is heated through.
Serve with Shredded Cheese on soup. I also made a side salad and served with leftover cruncky mashed potatoes.
