OMG, I'm in TROUBLE...Brown Sugar Brownies!

So I posted the other day that I was planning to make these brownies for a Super Bowl party. I went and bought the ingredients and was soo excited to make them and then Jeffrey had to work so we didn't get to go to the party. (It is a good thing, he got another job for this month so I was happy!) I decided that I couldn't let the ingredients go to waste so I made these brownies yesterday. They are AMAZING! Now, I am in big trouble because I have no one to eat them but me! I am thinking I will take them to Bible Study tonight and distribute them among the ladies.

This recipe came from the Pastry Queen Parties cookbook that my Gongie gave me for Christmas. I am going to break it down into 2 parts: the Butterscotch Brownies and the Brown Sugar Butter Icing. PS: I cut this recipe in half and still have a whole lot of brownies!

Butterscotch Brownies

1 stick butter at room temperature
1 1/2 cup packed brown sugar
2 eggs
1/2 Tb vanilla extract
1 1/2 cups flour
1/2 Tb baking powder
1/2 tsp salt
1 cup chopped pecans

Heat oven to 350. Toast the pecans for about 12 minutes.

Using the paddle attachment in your Kitchen Aid Mixer, beat the butter and brown sugar on medium high until fluffy, about 2 minutes.

Add the eggs and vanilla and beat for another minute.

In a separate bowl, sift the flour, baking powder and salt together.

Slowly mix the flour into the butter mixture.

Mix until incorporated and then stir in the pecans.

Spray a baking pan (I used one that is 11x7) with PAM.
Pour in the batter and smooth the top.

Bake for about 25-30 minutes. Your knife will not come out clean, it will be puffy on top and will shake a little, then it will set as it cools.

Cool completely before putting icing on top.

Brown Sugar Butter Icing (I am not a huge fan of icing, but this is INCREDIBLE)
1 stick of butter
1 cup pack brown sugar
2 cups powdered sugar
1/2 of 1/3 cup half and half (sorry I don't know the exact measurement for what this would be)
1/2 Tb vanilla extract

Melt butter and brown sugar in a small saucepan.

When melted mixture begins to bubble turn down heat and cook stirring occasionally for about 2 minutes. Set aside.

Using your Kitchen Aid mixer with the paddle attachment again, stir powder sugar, half and half, and vanilla until creamy.

Add in butter mixture and beat until combined.

Pour over cooled brownies and spread evenly.

Let the icing set before cutting into brownies (you can put it in the refrigerator to speed up this process!)

UPDATE! I took the brownies to Bible Study last night and the ladies went crazy over them. They each took 2 or 3 and said they were NOT sharing with their husbands or kids..haha they are soo funny!
