Last night Jeffrey was working through dinner so I made popcorn for my dinner. One of the cooking blogs that I read last week had a recipe for Southwestern Spicy Popcorn. I added Parmesan cheese to make it Cheesy Southwestern Spicy Popcorn. I was soo good that I think it will become one of my new obsessions. Beware...you must enjoy spicy food to love this popcorn.
Cheesy Southwestern Spicy Popcorn
1 tsp chili powder
1 tsp cumin
1 tsp paprika (I didn't have this so I left it out)
1 tsp black pepper
1/2 tsp cayenne pepper
1/2 tsp Lawry's seasoning salt
3 Tb parmesan or more to taste
Mix the seasonings together in a bowl.
Pour enough oil in a cooking pan to cover the bottom and turn on the burner to Medium High heat.
Put 2-3 kernels in the pan and wait for them to pop (be careful not to stand over the pot or it will pop hot oil in your face)
The oil is ready when these kernels pop. Pour enough kernels in the pot to cover the bottom of the pan.
Put the lid on the pan and turn down the heat to Medium.
Wait for the kernels to pop. When you hear them slowing turn the heat off and wait for them to stop.
Pour the popcorn in a big mixing bowl.
Sprinkle the seasoning over the popcorn and mix with your clean hands. Keep adding more seasoning until you reach the desired spiciness.
Sprinkle the cheese on the popcorn and mix. Taste to see if you need more.
I am getting hungry now and want to make some more!!! I LOVE popcorn for dinner.
