Super Bowl Dishes!

We bought our new TV today! Thank you to everyone who bought us Best Buy and Generic Gift Cards for Christmas. We waited until the Super Bowl sales to purchase the TV. It is a Samsung 40" LCD. My hubby is putting it together as we speak. Once we buy a TV stand with our leftover Gift Card money, I will take a picture of the TV.

All the cooking blogs I follow have been putting up food for the Super Bowl. We are going to a party tomorrow and I am taking a few things. The other day I made Bacon Wrapped Teriyaki Scallops and they were awesome! Much more juicy than bacon wrapped shrimp. I am not making these for the party tomorrow, but they would be a great dish for a party. I made Pioneer Woman's salsa for tomorrows party and tonight I am making Butterscotch Brownies with Brown Sugar Butter Icing. I have been saving these to try out when we have a place to take them to. I don't want to make a whole dish of brownies and be stuck with eating them all by myself! I will blog about them tomorrow..

Bacon Wrapped Teriyaki Scallops
Very Very Teriyaki Sauce (This stuff is awesome, it is great on fish and chicken!)
Olive Oil Pam Spray
Garlic Powder
Lemon Pepper
Cayenne pepper

Cut bacon strips in half. Cut scallops in half.

In a bowl mix the scallops and about 1/4 cup of Teriyaki Sauce.

Wrap the bacon around the Scallops so that it wraps around only once. You may want to trim off some of the bacon. I tried to cut the bacon into 3rds instead of halves and it was too short, the halves are just a little too long.

Spray Pam into a baking pan.
Put scallops in the pan and spray with a little PAM.

Brush more teriyaki sauce on each scallop.

Sprinkle a little garlic, lemon pepper and cayenne pepper on the scallops.

Bake on 425 for 10 minutes then take out and turn each scallop over. Brush with more teriyaki sauce and put back in the oven for 10 more minutes.

I also bought a mini food processor today with a gift card from Bed Bath and Beyond. I am so excited! I used it to make the salsa and now I will be able to make pesto!

Pioneer Woman's Salsa (this recipe made a lot of salsa, which is good for a party, but I would cut it in half if you don't need enough for 15 plus people! PS I had to make it in 2 batches since my food processor is a mini.
1 28oz Can of Whole Tomatoes with juice
2 cans Rotel
1/4 cup Chopped Onion
1 garlic clove (I added more)
1 Jalapeno (Add more if you like more spice, this salsa is only mild in spice)
1/4 tsp salt
1/4 tsp sugar
1/4 tsp cumin
1/2 cup cilantro (I used more)
juice of 1 lime

Chop the onion, garlic, and jalapeno (Remember to use gloves for the jalapeno so that you don't get jalapeno burn!)

Put all ingredients in the food processor and blend until smooth.

Taste and see if you need to add more of something.

Refrigerate for at least 1 hour before serving.
