I am always trying to find new ways to make chicken. We always need a protein for dinner and chicken is Jeffrey's favorite. We love Caprese salad and I had basil, mozzarella and tomatoes I needed to use up so I decided to use it to make into a chicken dish!
2 Chicken Breasts or 6 Tenderloins
6 Basil Leaves
Fresh Mozzarella Cheese
1/4 cup Panko Bread Crumbs
3 Tb Olive Oil
1/8 tsp Salt
1/8 tsp Pepper
1/8 tsp Garlic
Mix 1 Tb Olive Oil, salt and pepper on raw chicken breasts.
Grill chicken on both sides until almost done.
Pour 1 Tb olive oil in bottom of a baking dish.
Place chicken breasts in the bottom of the baking dish.
Sprinkle 2 Tb panko bread crumbs over chicken.
Cover the chicken with basil leaves.
Place sliced tomatoes on top of the basil.
Slice mozzarella and place on top of the tomatoes.
Drizzle with 1 Tb olive oil and 2 Tb of balsamic.
Sprinkle with 2 Tb of Panko Bread Crumbs.
Put in the oven on 400 for 15 mins.
