Magical Butter Sauce over Scallops

I found this recipe from Pioneer Woman's Tasty Cooking Blog, which is different from her own blog. It can be poured over meat, fish, vegetables...it is yummy, no...it is Magical! I poured it over seared scallops (refer to my post on February 13 to learn how). I also served it with Italian Mushroom soup from the February 17 blog post, salad and bread. The bread was fabulous dipped in the Magical Sauce.

Magical Butter Sauce over Seared Scallops
Scallops
Olive Oil
Pepper
1/3 cup Butter
2 Tb fruit preserves (I used Jeffrey's Grandmother's famous Apricot Preserves)
1 Tb Balsamic Vinegar
pinch of Salt and Pepper

Melt butter in microwave


Stir in preserves, vinegar and salt and pepper....and your done! So easy its...Magical!



Cook Scallops

Place scallops on your plate and pour as much sauce as you like over them.

I know...it looks fabulous...I am getting hungry!


Tomorrow night is Girl's Night with Megan! I am making my favorite fish tacos from one of my first blog posts on November 19. I am also making a new pie called Mocha Silk Pie. I have been looking for an excuse to make this new recipe, and what better an excuse for chocolate than a girl's night!
