Calzone

Today is a Lazy Sunday, except not because I am going to work on my website! Jeffrey is on set so I have all day to use his computer (it is a Mac and does more than mine). I really like computers and wish I knew more about them. Maybe one day I will take some computer classes. Hopefully I can figure out how to work on the Mac!
Last month at Dream Dinners, Calzone's were on the menu. I kept wanting to try one, so the other day I made my own. There are so many options for toppings I want to make more with other ingredients. This would be a fun dinner for a party!

Calzone
Pizza Dough: My Homemade recipe is on the January 27th blog post
Ricotta Cheese
Toppings: whatever you want here is what I used
Diced Chicken, mushrooms, tomatoes, fresh mozzarella cheese, Roasted Garlic, Parmesan Cheese
Olive oil
Optional: marinara sauce

After washing and chopping the tomatoes, mozzarella and mushrooms, dry them really well so that they do not make the calzone mushy.

Roll out pizza dough into a circle (or close to one..)

Place the dough into a baking pan. Half on the bottom and the other half over the the back side.

Spread about 1/4 cup of ricotta cheese on the bottom half of the dough.


Layer your toppings.
Pull the other side of the dough over the bottom side and press the edges together. Roll the edges up slightly the press down again to really seal the crust down.


Use a fork to poke a few holes in the dough to allow the steam to escape.
Brush some olive on the top of the dough.


Bake on 450 degrees for 15-20 minutes (check to see how it is cooking)
Let cool then slice and serve with a cup of marinara sauce.
