Last Minute Cookies!

Last night we had dinner with our friends Ellenor and Raphael. She lives in this amazing house in the Hollywood Hills. I tried to take a picture of her view, but it was too dark, it was soooo cool! She made us a delicious dinner, but Jeffrey called me at 4:00 to say that we were to bring dessert and I still had to shower and get ready. Needless to say, I needed something quick that included ingredients that I had in my kitchen. I looked through several cookbooks and found this recipe in one of my Paula Deen cookbooks. These cookies are so yummy and extremely easy, a new one for me to put on my list of go-to desserts!

Paula Deen Peanut Butter Cookies
1 cup Peanut Butter (crunchy or smooth)
1 cup sugar, plus 1/4 more for later
1 egg
1 tsp vanilla extract
Optional: shaved chocolate for topping

In a mixing bowl stir together Peanut Butter, 1 cup sugar, egg and vanilla extract.

Use a Melon Ball scooper to scoop dough and put on a greased cookie sheet.

Use a fork to press a criss-cross design on the cookie. Then Bake on 325 for 10-12 minutes.

While cookies are baking, shave 1-2 squares of Semi-Sweet chocolate into a bowl.

Mix 1/4 cup sugar into the chocolate shavings.

Remove cookies from oven.

Use a spoon to sprinkle chocolate shavings over the cookies while still warm.

Let cookies cool before transferring them to another plate.

Serve with a cold glass of milk! Enjoy!
