Lime Grilled Chicken with Black Bean Sauce

Please make this chicken dish! It has become one of my new favorite recipes. I found it in my cookbook called "Tuxedos to Tailgates" it is the Dallas Jr. League Cookbook. It tastes soo yummy, I will be making it again soon.

Lime Grilled Chicken with Black Bean Sauce

Marinade
Juice of 2 Limes
1 Tb of Olive Oil
1/4 tsp cayenne pepper
4 tsp minced garlic
2 chicken breasts or 6 chicken tenders



Put marinade and chicken into a gallon bag and marinade in the fridge overnight.


Lime Grilled Chicken with Black Bean Sauce Marinaded Chicken
Black Bean Sauce:
1 cup black beans
1/2 cup orange juice
2 Tb balsamic vinegar
1/4 tsp salt
1/8 tsp pepper 2 tsp minced garlic
Garnishes:
1/4 chopped red bell pepper
1/4 red onion chopped
3 Tb fresh cilantro chopped
Optional: Sour Cream

Drain and Rinse Black Beans

In a food processor blend the ingredients for the black bean sauce until smooth.



Put sauce into sauce pan and heat until warmed through.
Chop garnish ingredients and mix in a small bowl.

Take chicken out of the marinade and put on grill pan. Cook until done.

Spoon some black bean sauce on a plate then put the chicken on top. Spoon some garnish over the chicken. Spoon a little sour cream on the chicken dish. Serve with Spanish rice.
