Fish with White Cheese Sauce and Popovers

Laundry days are so annoying! One of my pet peeves is when one person takes up all the washers, it is rude! I try to only use 2 washers at a time leaving the other 2 washers for someone else. THEN the #2 pet peeve is when you go to switch your clothes from the washer to the dryer and someone has already taken the clothes out and put them aside so they can use the washer. I set my alarm so it is never any longer than 5 minutes that they would have to wait! Haha, sorry I had to vent...
I am getting things ready to leave for the big OD (Odessa), for my baby sister's graduation. I cannot believe she is graduating!! She was my little baby doll when she was born, now she is grown. Even worse...that means it has been 7 years since I graduated! Time flies soo fast. Jeffrey and I were already dating when I graduated, it is so hard to believe everything that has happened since then, seems like yesterday.... (picture of Ivy on the right, so pretty!)

Fish with White Cheese Sauce

2-3 whole White Fish Fillets- I used Tilapia
1/2 onion sliced- I had some shallots so I sliced 2 of those
1 cups sour cream
1 cups Grated White Cheddar Cheese
2 Tablespoons Lemon Juice
1/2 teaspoon Salt
1/2 teaspoon Fresh Ground Pepper

Put Tilapia in a baking pan and sprinkle with salt and pepper.
Put sliced onions over fish.
In a sauce pan mix together sour cream, lemon juice and cheese.

Cook on medium low until cheese melts.
Pour sauce over fish and cook on 400 for 20 minutes.
I served the fish over white rice.

1 egg
1 cup warm milk
1 cup flour
3 Tb butter
1 tsp salt
Turn oven to 375. Melt butter and use a brush to 1 Tb of butter into 8 muffin cups. Place muffin tin in oven for 5 mins.
Blend egg.
Warm milk in microwave for 30 seconds, then add to egg and blend for a few seconds.

Sift flour into blender, then add remaining butter and salt. Blend until smooth.
Remove hot muffin tin from oven and pour batter into 8 cups.
Bake on 400 for about 20 mins. Try not to open oven while baking.
I wasn't expecting this fish to be very good, but it had so much flavor! Jeffrey loved the popovers he has eaten most of them already!
