Sour Cream Chicken, Quick and Easy!!

Whoa I have had a boring two days! I got stuck reading a book and finished it in two days. It was the second of the Mark of the Lion Series be Francine Rivers called "Echo in the Darkness." This is a trilogy and I am trying to keep myself from purchasing the third one so that I can get some things done. Still cooking though, the past several recipes I have tried out have been really good. This one was simple and yummy. I think it will become a weekly chicken dish for us.

Sour Cream Chicken
3 Chicken Breast or 7 Chicken Tenders
3/4 cup crushed crackers (any crackers you have around the house will work)
1/2 cup grated cheddar cheese (I used the white cheddar)
1/2 cup sour cream
salt and pepper
Optional: 1 1/2 Tb butter

Put crackers in a bag and use a rolling pin to crush the crackers to fine crumbs.
Mix cracker crumbs, cheddar cheese and salt and pepper into a dish.
Put sour cream into a bowl. Dip chicken into sour cream, then into crumbs and put into a baking dish.
Melt butter in microwave and then pour over chicken.
Cook in oven on 375 for 25 mins.

No need for a sauce, this chicken has lots of yummy flavor!

I made this tonight for my hubby. He was in heaven. He practically licked his plate, and then I caught him in the kitchen picking at the baking dish! This went really well with the cantaloupe salad that Shelbi Mentions on her site.
