The trip was a success! I was so sad to leave... We shopped, cooked, relaxed in the hot tub, played croquet and watched movies! (Picture is of Melissa, Carol and I after our long game of Croquet!) Our wedding video is amazing! I am so excited for my mom to see it when she comes next week. I went to the store today to gather my groceries for new meals. I will have more to post soon.
The weird thing about being in Southern California is that there isn't the definitive "start of a season." I have heard that it is very hot in Texas already, I remember how quickly it came and I was always so excited. But here the weather is so similar day-to-day that time goes by without you knowing. I have been waiting to post this recipe until strawberries were in full season. It is one of my favorite summer recipes! The strawberries here are now perfect. I went to Costco today and bought a huge container for only $3.50. I am also going to make some strawberry ice cream this week!
Strawberry Chicken Salad
2 1/4 cups of strawberries
2 1/4 cups of pulled rotisserie chicken
1/4 cup toasted pecans
1/4 cup chopped celery
1/4 cup cilantro
1/4 cup diced red onion
2 Tb balsamic vinegar
2 tsp olive oil
Toast pecans in oven.
Pull apart chicken and measure out 2 1/4 cups, save the rest for another dish.
Chop celery, strawberries, cilantro, onion, and pecans, then mix into chicken.
Pour balsamic and olive oil into mix, stir and see if you want more.
Refrigerate for at least 30 mins before serving.
Serve alone, over lettuce or in a tortilla as a wrap!
