Cheesy Chive Stuffed Chicken and Cheesy Chive Mashed Potatoes

My mom told me about this recipe a while back, and I forgot about it until she mentioned again that I should make it. I love the bacon, but Jeffrey is extremely opposed, so I cooked his with the bacon, then removed it before serving it to him...haha! You should make this if you are having a rough day and you really want to pound something! I LOVE that part.

Cheesy Chive Stuffed Chicken and Cheesy Chive Mashed Potatoes
For Chicken

2 Chicken Breasts
3 Tb Whipped Chive Cream Cheese
1 Tb butter
2 Strip Bacon

For Potatoes
3-4 Potatoes
3 Tb butter
1/3 cup Whipped Chive Cream Cheese
2 Tb Heavy Whipping Cream

This is the FUN party, especially if you have had a stressful day! Put chicken breasts in a gallon bag, then take a meat mallet and pound away until the chicken is about 1/4 inch thick.

Salt and Pepper both sides of the chicken.
Spread 1 1/2 Tb of cream cheese on the bottom (ugly side) of the chicken breasts.
Put butter on chicken then roll the breast up. I'm not sure that this part is necessary. Next time I may put something like asparagus or another long vegetable here, it would be yummy.
Roll bacon around the chicken breasts.
Put chicken in a baking pan and cook on 400 for 35 mins.

Cut Potatoes in chunks and then boil in salted water until can be poked through with a fork. (I like the skins so I leave them on, but you may peel them if you like)
Drain cooked potatoes.
Return potatoes to pan and cook while mashing so that most of the water cooks off.
Stir in butter, cream cheese, salt and pepper. Taste to see if you need more salt.
Stir in cream. This is optional if you want to cut down on the fat, but it makes them soo yummy!

After the bacon and cream cheese and butter and cream....I thought.. hmm I need a salad!
