Citrus Infused Garlic Butter Over Tilapia and Polenta

Last night, I gathered with some girls for a cooking night, sooo fun! I will be posting the full menu with recipes soon. We ate sooo much food and I felt so yucky today. I am calling it a food hangover, because I know my one drink couldn't have made me feel like this. I am still full, therefore, holding off on making dinner tonight, sorry honey, but sandwiches it is!

This fish was so easy! You could make the sauce to pour over any fish, or even beef or chicken. It isn't sweet, just rich with a little hint of citrus. This recipe is from Giada's Family Dinner's Cookbook, she calls it Tilapia with citrus bagna cauda (what???) so I changed the name.

Citrus Infused Garlic Butter Over Tilapia
3 Tb butter
2 Tb olive oil
3 anchovy fillets
1 1/2 tsp minced garlic
2 Tb orange juice
1 Tb thinly sliced basil
1 tsp lemon zest
1 tsp orange zest
salt and pepper
2 tsp olive oil
2 tilapia fillets

Prepare zest
Chop anchovy fillets into small bits.
Melt butter and 2 Tb olive oil in skillet on medium.
Add anchovies and stir until they dissolve.
Add garlic and cook for about 30 seconds.
Remove from heat and stir in juice, basil and zest, then season with salt.
Season tilapia fillets with salt and pepper. Heat 2 tsp olive oil in skillet and cook on for several minutes on both sides.
It fell apart....oh well at least it tasted good.
Pour garlic sauce over tilapia and polenta. I will be writing a post on the polenta later.
