Spicy Roasted Corn with Feta Cheese

Jeffrey and I have been hermits lately! I guess everyone goes through times when you get stuck in a rut. Yesterday I told him that I am going to make a list of activities for us to choose from and at least once a week (or every 2 weeks if he is on a job) we will do something on the list. Here are some of the things I have come up with so far: Go on a walk (explore the parks around the city), go to the movie, invite friends over for dinner, go to the beach (crazy how we live so close yet since we have been married we haven't gone yet!), go out to dinner, go to the Getty Museum, take the train to San Diego (or San Clemente, it's closer), take a trip to the Red Wood Forrest. Some of these cost money, so they will be special trips. I know there are so many free activities in the city so I am going to start researching. Those of you who are from here please send over more ideas for me!

Corn and Summer are one and one! I don't have a grill so I roasted this corn under the broiler and it was yummy!
Spicy Roasted Corn with Feta Cheese

2 ears of Corn
1 Tb Olive Oil
Seasoning Salt
Pepper
1 Tb Mayo
1 Tb sour cream or Greek Yogurt
1/2 tsp chili powder
1/4 tsp cayenne pepper
1/2 lime juiced
1/4 tsp salt
1/4 cup feta cheese

Strip the husk from the corn. Rub the corn with olive oil.

Season with seasoning salt and cracked pepper.

Put on grill or under broiler for several minutes, until starts to brown.

While corn cooks, make sauce. Stir together mayo, yogurt, chili powder, cayenne, lime juice and salt.

Once the corn is cooked, use a basting brush to brush the sauce all around the corn.

Sprinkle feta cheese on top of corn and serve with lime wedges.

I made this corn as a side dish with my Lime Grilled Chicken with Black Bean Sauce! Yum!

Update!

I made this again the other day and changed it up a bit. Instead of serving the corn whole, I cut it off the husk after cooking it, then I stirred in some of the spicy mayo mix and feta. I liked it better because it was less messy to eat and the feta was more evenly distributed.

This look sooo delicious!! I don't have a grill either, so I'm excited to have a broiler-friendly recipe for one of my favorite summer foods - fresh corn!
