Apple Truffle Slaw

Megan saved me from my hot house last night! Both our husbands were working and she needed a date to see a play that her friend was in, so she called me. I was so thankful to get out of this steam room! I also have a fun afternoon planned today to take me out of the house. After work I am going to see Eclipse with my friend Asia! So excited, I have heard from so many Twilight fans that it is the best one yet!

I made Megan and I my grilled chicken sandwiches before the play. I had some of this slaw left over and it was a great side dish with the sandwich. She loved it too! I found the recipe in one of my Food Network Magazines. I have never been a fan of coleslaw. Cabbage and mayo, or whatever they put in it just grossed me out! But when I came across this recipe the word TRUFFLE made me take another look. I made it the other day and was pleasantly surprised at how refreshing it was.

Apple Truffle Slaw

1 large clove of garlic
2 Tb of olive oil
2 Tb of grapeseed oil
1 Tb of Truffle oil
2 Tb of lemon juice
1/4 cup of sugar
2 Granny Smith apples
1/4 head purple cabbage
3 Tb of walnuts
1 1/2 Tb of cilantro
salt and pepper

Get ready for lots of chopping!!
Chop cabbage very thin.
Peel apples then chop them into matchsticks. If you have a food processor that will Julianne them it would be helpful.
Toast Walnuts, then chop (not too fine)
Not pictured: Chop cilantro and mince garlic.
Mix all ingredients in a bowl.
Refrigerate for at least 30 mins before serving.
I served with Lime Butter Fish and Carrot Orzo. I made the Carrot Orzo when I didn't have a camera so I will have to make it again soon so that I can post it for you.
