Salad Dressing Part 2: Creamy Blue Cheese and Blue Cheese Vinaigrette

A few nights ago Jeffrey and I went to a friend's birthday party at a really fun club! We never get out so this was a cool experience. The club calls itself a Cuban Speakeasy. You must have reservations and dress up in cocktail attire. When you show up the bouncer is dressed in 1940's gangster garb then he radios to tell the people inside that "he is sending us upstairs and to be ready for us." At this point Jeffrey and I are "wide-eyed" and don't know what we have gotten ourselves into, we walked inside and climbed up the stairs not knowing what we will find up there. We walk into a room that has little decor and looks like part office/part bedroom. Two people are waiting for us and tell us that we have a table downstairs and there with be 4 live burlesque shows at the top of the hour, then they escort us through the "closet" doors and we walk through some clothes into the dark club. We got there right before 10 so the burlesque dancer started soon after we showed up. She was dressed like a 1930s pin up girl. She was really entertaining, not too Risqué. The drinks were really yummy. I had a Mojito and a Rum Punch. Jeffrey and I had to leave early because we both had to work early the next morning, but it was a fun event for us. We want to go again when we have visitors come in town!

Creamy Blue Cheese Dressing
2 Tb mayo
3 Tb blue cheese crumbles (I used Gorgonzola)
2 Tb heavy cream
3 Tb Sour Cream
1/2 Tb Lemon juice
1/4 tsp Worcestershire Sauce
1/8 tsp Franks Red Hot
Freshly ground black pepper
Optional: 1 tsp Chopped Chives

For a chunky dressing stir all ingredients together in a bowl (this is what I did).
For a creamy dressing blend ingredients in a food processor.

Blue Cheese Dressing is always yummy with thin slices of purple onion and tomato!

I also made a yummy Blue Cheese Vinaigrette. So easy!
2 Tb olive oil
2 Tb blue cheese crumbles
1 1/2 Tb white wine vinegar
1/4 tsp dried oregano
1/8 tsp salt
1/8 tsp black pepper
Mix vinegar, and seasonings in a bowl. Slowly whisk in olive oil.

Stir in blue cheese crumbles. This dressing is best if you let it sit for a few hours in the fridge. 
I originally had this dressing at a restaurant in Fort worth called Lucile's.  They strain the blue cheese from the dressing when they serve it. The flavor of the blue cheese remains, and it is so yummy. They serve it over iceberg lettuce with sesame seeds and extremely thin slices of red onion.
