Shrimp Fajitas

I took my car to get maintenance this morning and of course when I got there they tell me that it might take until the end of the day! I had brought my bible to work on my studies, but I was not ready to wait all day at the dealer. Thankfully Jeffrey had not gone to work yet so he was able to come get me and take me home. Why don't they tell you these things?? Hopefully I will have it back this evening, because I have work tomorrow! 

These were another recipe from Gina's Weight Watcher Blog. I LOVED these tacos! They are on my menu again next week. I guess low fat can taste yummy.

Shrimp Fajitas
1/2 pound shrimp
1/2 red bell pepper
1/2 onion
2 tsp olive oil
1 lime
2 Tb chopped cilantro
1/8 tsp chipotle chili powder
98% fat free whole wheat tortillas
Optional: 1/2 avocado (PS this wasn't part of the weight watcher recipe)

Slice red pepper and onion into thin strips.
Cook with 2 tsp olive oil until tender.
Remove tails from shrimp and cut in half or thirds depending on the size of your shrimp. Squeeze 1/2 lime over the shrimp.
Season with salt, pepper and chipotle. I think I used a little more than 1/8 tsp of chipotle, I like it spicy!
Add shrimp to the pan with the peppers and onion. 
Stir around to cook the shrimp on all sides.
Chop cilantro, slice avocado and the other half of the lime.
Fill tortilla with shrimp fajitas, 2 slices of avocado and 1 Tb of cilantro.
Serve with rice and a slice of lime.

These were very tasty, especially for a weight watchers meal!! I am going to make them again very soon.

Haha I got all the ingredients this weekend to make this too, but I haven't made it yet. I love Gina's blog. Thanks for suggesting it. I made the thai curry tilapia tonight and JM said it was the best thing I've ever made. I also made the crab cakes and they were delicious as well!
