I am always looking for new chicken ideas for Protein Boy. I got the idea for this recipe from my Food Network magazine and then I spiced it up a little. Don't let the name fool you, these aren't tacos, but when I made them, I thought they looked like tacos. They were really yummy and put a smile on Protein Boy's face.
2 Chicken Breasts
1/2 cup Mozzerella or Jack Cheese
2 Tb finely chopped Red Bell Pepper
2 Tb cilantro leaves
2 Tb Arugula leaves torn into pieces
1/8 tsp Chili Powder
1/8 tsp Cayenne pepper
Salt and pepper
2 tsp Olive Oil
Stir together cheese, cilantro, arugula, bell pepper, and cayenne pepper.
After I tried to stir this together I realized the arugula needed to be torn into smaller pieces.
Slice chicken through the middle but don't cut all the way through.
Fill chicken with cheese mix and fold over.
Spray baking dish with pam. Put chicken into the pan then drizzle with olive oil and season with salt, pepper, and chili powder. (see they look like tacos)
Cook for 30 minutes on 375.
This was really tasty! I served with a baked potato.
