Taco Chicken

A fun day ahead.... It's my birthday!! I have a great day of shopping, cooking and a hair appointment ahead. Then my friend Megan and her husband Will are coming over for dinner! Yes, I am cooking on my own birthday, but I LOVE to cook so why not! I tried making a cake yesterday and it was awful! The cake was too salty and the caramel icing was like water.... I tried to take a picture, but my camera's battery was dead. It was a sad sight. Now I have come up with a new recipe for dessert, Bananas Foster Ice-Cream Pastry! I love bananas foster! Hopefully the meal will turn out better than the cake..I will let you know.

I am always looking for new chicken ideas for Protein Boy. I got the idea for this recipe from my Food Network magazine and then I spiced it up a little. Don't let the name fool you, these aren't tacos, but when I made them, I thought they looked like tacos. They were really yummy and put a smile on Protein Boy's face.

Taco Chicken
2 Chicken Breasts
1/2 cup Mozzerella or Jack Cheese
2 Tb finely chopped Red Bell Pepper
2 Tb cilantro leaves
2 Tb Arugula leaves torn into pieces
1/8 tsp Chili Powder
1/8 tsp Cayenne pepper
Salt and pepper
2 tsp Olive Oil

Stir together cheese, cilantro, arugula, bell pepper, and cayenne pepper.
After I tried to stir this together I realized the arugula needed to be torn into smaller pieces.
Slice chicken through the middle but don't cut all the way through.
Fill chicken with cheese mix and fold over.
Spray baking dish with pam. Put chicken into the pan then drizzle with olive oil and season with salt, pepper, and chili powder. (see they look like tacos)
Cook for 30 minutes on 375. 
This was really tasty! I served with a baked potato.
