Figgy Flatbread and Fall Festival Tea Time

I woke up to an overcast day and the sun never came out today. It makes me feel like fall is coming! Many of my "facebook friends" have been posting that they are ready for fall and the upcoming holidays. I have to admit, I am already in Christmas shopping mode. I am trying to get some gifts bought early so that I don't have to do it all at once (and go broke doing it!). To really get you in the fall spirit, I recommend this tea that my boss, Brook, turned me on to. It tastes like a fall festival in your mouth! It is caffeine-free and already sweetened. I found it at my regular grocery store, "Von's." It is becoming my nightly treat! (in case you can't read it, it is the "Sweet and Spicy" flavor)




I love figs! They are only in season for a short time, so I am eating them up! Here is a recipe I found on Stacey Snacks blog. I made it for lunch one day, but it would be a nice appetizer.

Figgy Flatbread
2 pieces of naan flat bread
1/4 cup ricotta
1/2 red onion
2 leaves from sprigs of rosemary, chopped
1/4 cup grated parmesan
8 figs
1/4 cup olive oil
salt and pepper
Optional:
balsamic vinegar 
arugula

Saute onions, rosemary and 3 Tb of olive oil in a pan until onions are tender.
Spread 2 Tb of ricotta on each piece of bread.
Distribute onions evenly on each piece of bread.
Slice figs in half and place on top of the bread.
Drizzle the remaining olive oil from the skillet over the bread. Season with salt and pepper, then cook in the oven on 400 for 12 minutes.

Top with arugula and drizzle with balsamic and olive oil, and season with salt and pepper.
