Caprese Salad

Quiet, rainy Sunday morning... Last night we went to a fun couple's shower for my friend Megan and her husband Will. They are due with a little girl named Sarah in December. We had fun meeting all their friends. Most of them are actors and had us laughing all night!

For our anniversary we wanted to try a new restaurant, so we went to an Italian place at my favorite shopping center in Glendale. I thought it would be good because the environment looked fun. I was very wrong! We should have left as soon as the salad came out, because it was very, very wrong! When Jeffrey went to Italy he fell in love Caprese Salad. We ordered one to share and it came out with iceberg lettuce and only like 4 tiny strips of basil. Every dish that followed was poor quality. Afterward I wanted to make a real Caprese Salad!

Caprese Salad
Fresh Basil
Fresh mozzarella in water
Roma Tomatoes or Heirloom Tomatoes
Olive Oil
Balsamic
Salt and Pepper

Trader Joe's is selling these basil plants for less than a box of basil! My box of basil always goes bad faster than I can use it so this is what I got!
Slice tomatoes into thin rounds.
Slice the mozzarella balls into thin slices. Layer tomatoes then mozzarella, and basil.

Then I stacked another layer of tomato, cheese, and tomatoes and topped with basil. (These green heirloom tomatoes look like pickles!)
Serve with a drizzle of olive oil, Balsamic vinegar and salt and pepper.
