Grilled Panzanella Salad

I have been a lazzzy blogger lately! I was blaming it on the heat, but now I have no excuse. What a difference a week makes! Today was more like a winter day for us, 60 degrees, overcast and rainy, Loved it! 
So...Saturday was sooo awesome! I went to see Carrie Underwood at the Hollywood Bowl. I had never been to the bowl, but it was really neat, everyone brings their own picnic. I have never been a big fan of Country Music, therefore I had not heard many of Carrie's songs, but now I am obsessed! She was amazing! Then best of all there was fireworks at the end that rivaled some of the best Fourth of July shows I have seen, and you know how much I love fireworks!! I went with my friend Meredith who just moved here from New York. What a fun girls night. (PS I tried to take video on my phone to post on here, then I realized that I didn't push record, boo...)
This week my main project is to decide on a gift for Jeffrey for our anniversary on Saturday. The traditional first wedding anniversary gift is supposed to be paper, so I was thinking about a book. Any ideas?

This is another recipe we made while at the ranch. I loved the dressing! It is so pretty on the plate too.

Grilled Panzanella Salad
1/2 red bell pepper
1/2 orange bell pepper
1/2 yellow bell pepper
1/2 purple onion
1/2 cucumber
1 bunch basil
15 grape tomatoes
1 garlic clove
1 small baguette
1 Tb dijion mustard
1/4 cup olive oil
3 Tb red wine vinegar
salt and pepper 
Slice tomatoes in half. Chop cumber and basil.
Slice onion and bell peppers.
Slice bread.
Mix together mustard, garlic (minced), olive oil, vinegar, and salt and pepper to taste.
Preferably on an outside grill, but I had to use a grill pan....Grill onion and bell peppers until grill marks appear on each side.
Next grill bread.
Toss all ingredients together, then slowly toss in dressing (you may not need all of it).
