Tandoori Chicken Sandwiches

I have had a big week! BSF started back 2 weeks ago, but I wasn't able to go until this week. We are studying Isaiah, which is a new study for BSF. My group leader is adorable and Megan and I are in the same group again! This bible study has been a blessing to me year after year, I can't wait to see what comes of it this year. 

Wednesday I went to the Elle Tahari fashion show put on by the Junior League. It was held at the Saks 5th Avenue in Beverly Hills. It was so fun and fancy and the clothes were beautiful!

Our heat wave has gone on a little longer than I thought... therefore I have not been able to make dinner the past few nights... Here is a sandwich I made a few weeks back. 

Tandoori Chicken Sandwiches
1/4 cup greek yogurt
1/2 Tb ginger
1/2 Tb garlic
1/2 Tb coriander
1/2 Tb cumin
1/4 tsp cayenne
1/8 tsp turmeric
1/2 tsp kosher salt
1 1/2 Tb vegetable oil
8 chicken tenders
3 pieces of nan flatbread
2 Tb butter
1 medium tomato
1/4 cup thinly sliced red onion
feta cheese
basil, mint or cilantro- I used basil

Stir together yogurt, ginger, garlic, coriander, cumin, salt and oil.
Pour marinade into a bag with chicken tenders and allow to marinade for 1 hour.
Spread chicken tenders on a baking sheet and cook under the broiler for 8 minutes.
Spread butter on bread.
Slice tomatoes, onion and basil.
Half way through the chicken cooking (4 minutes) put bread into oven (not directly under broiler), for the remaining 4 mins. 
Remove chicken and bread from oven.
Fill sandwiches with chicken, tomatoes, basil, onion and feta cheese.
