Pom Palm Salad

Pom Palm Salad

This is my new go-to salad. I am currently obsessed with it. The texture of the pomegranate seeds with the hearts of palm and the greens work really well.
It is messy to extract the seeds for a pomegranate, but like I said in an earlier blog, it is a good husband  project. Jeffrey loves pomegranate and this is one of the few jobs I will allow him to do in the kitchen.


Pom Palm Salad
Several cups of Arugula or other Greens
1 green onion, chopped
1-2 hearts of palm, sliced into thin rounds
Pomegranate seeds (about 1/4 cup)
2 Tb Balsamic Vinegar
3 Tb olive oil
salt and pepper
Hold your hand over the bowl while using a fork to mush the juice out of the seeds.

Stir in the vinegar, oil, salt and pepper.
Mix together greens, hearts of palm and green onion.
Stir in Pom Dressing 
I love how the Pomegranate juice turns the hearts of palm pink. This is a very pretty salad for the Holidays!
