Baking Day Part 2: Cracker Cookies and More!

Meg needed a recipe to make for Baking Day so I suggested the Cracker Cookies that my mom used to make for catering jobs. They are amazing and sooo easy!

Cracker Cookies:

40 club crackers
1 1/2 sticks of butter (3/4 cups)
1/2 cup sugar
1 tsp vanilla
1/2 cup or less of sliced almonds

Put parchment paper in the bottom of a pan. Lay out crackers side by side, filling up the pan.
In a small saucepan, melt butter and sugar. Stir while cooking until boils. Cook for 2 minutes, then remove from heat and stir in vanilla.
Pour butter sauce over crackers. Use a spatula to spread sauce evenly over the crackers.
Sprinkle almonds over the crackers. Bake in the oven on 350 for 10-12 mins. Remove and cool before breaking apart to serve.

Emily's Shortbread Recipe! (Makes 2 - 8 inch rounds)

2 cups flour
1 1/4 tsp salt
1 cup unsalted butter, softened
3/4 cup confectioners sugar

Preheat oven to 300. Whisk to combine flour and salt in a bowl.
In a seperate bowl, beat the butter with electric mixer on medium-high until fluffy, about 3 mns. Gradually add sugar and beat until pale and fluffy, about 2 mns more. Reduce speed to low. Add flour mixture all at once; mix until just combined.
Divide dough in half and shape into disks. Using plastic wrap, press disks into b (or a shortbread mold coated with cooking spray). With plastic on dough, chill 20 muttered round cake pansins.

using a wooden skewer, pierce dough all over at 1/4" intervals. 
Bake until golden brown and firm in the center, 45 to 55 mns. let cool 10 mins on a wire rack. 
 Invert pan onto wire rack and tap on bottom to loosen the shortbread. Let cool completely.

Emily's Puppy Chow
9 cups Crispix
cup chocolate chips
1/2 cup peanut butter
1/4 cup butter
1 tsp vanilla
1 1/2 cups confectioners sugar
Put cereal in a very large bowl. 
In a saucepan, heat chocolate chips, peanut butter and butter over low heat. Stir frequently until melted. Remove from heat and add vanilla. Pour mixture over cereal and stir until coated.

Shake mixture with sugar in 2-gallon bag.
