Cilantro Pesto Shrimp

It's beginning to look a lot like Christmas! I love decorating for Christmas. My mom always went overboard when decorating our house for Christmas each year. It was so fun and I plan to continue the tradition with my family. It is expensive to buy decorations, so I am accumulating a little each year, good thing our apartment is small! I started decorating our place for Christmas before Thanksgiving. This week Mom sent me some Snow Villages to put in my shelves, it looks so fun. Here are some pictures of our Christmas decor.

 I gave him this one several years ago. The curly feathers reminded me of my hair.

Cilantro Pesto Shrimp

Juice of 1 lime
1 1/2 cups cilantro leaves
2 green onions
2 Tb toasted pecans
1 clove garlic
1/2 tsp sugar
2 Tb vegetable oil
2 Tb olive oil
salt and pepper
1/2 pound shrimp
                           

Toast pecans
Rinse shrimp
Put all ingredients (except shrimp and oil) in a food processor
Begin blending.
Slowly drizzle oil into processor while blending.

Spoon 2 Tb pesto in a skillet, add shrimp.
Cook shrimp in pesto until pink.
Serve with a spoonful of pesto over shrimp.
