Simple Parmesan Chicken over Pasta

I had a wonderful weekend in Odessa! Usually my trips home are full of events and being pulled from back and forth from friends and all my family. This time I was there for 5 days and besides Ivy's graduation and grad party we didn't have any plans. I felt like I had some time to just sit back and relax! Well....haha we didn't rest, yesterday mom and I cleaned out her closet for 7 hours straight!!!! I will be writing a blog about it on my Fashion and Makeup Blog. Ivy was adorable! Her party was a blast and now she is all grown up with her High School degree and her first job as a lifeguard. Now back to reality in LaLa land. I can't wait to see Jeffrey, I missed him so much, but I was really sad to leave my mama!!
Jeffrey is working and will be home soon. I don't have much food in the house since I haven't been home, so I am trying to figure out what to make him before he gets home. This meal is easy and includes ingredients that don't perish quickly, I usually reserve it for later in my 2 week menu. I think I will make it tonight!



Simple Parmesan Chicken


7 Chicken Tenders (3 for me, 4 for Jeffrey..)
3/4 cup Panko bread crumbs
1 teaspoon Italian seasoning
1 cup marinara sauce
1/2 cup Italian shredded cheese or shredded Mozzarella
1/4 cup freshly grated parmesan
Spaghetti

Spray a baking pan with Pam. Light up chicken tenders side by side. Sprinkle Italian seasoning and salt and pepper on chicken.


Sprinkle bread crumbs evenly over chicken


Pour Marinara over bread crumbs and use a spatula to spread evenly.


Sprinkle cheeses over sauce.


Bake on 375 for 15 mins covered and then uncovered for 10 more mins.

While chicken is baking cook pasta.

Remove chicken from oven. If you are using chicken breasts you may want to test the internal temp. I don't think my thermometer works, I want a digital one...


Layer pasta on the bottom of a plate, then spoon chicken tenders over pasta.


Soo yummy!

Fish with White Cheese Sauce and Popovers

Laundry days are so annoying! One of my pet peeves is when one person takes up all the washers, it is rude! I try to only use 2 washers at a time leaving the other 2 washers for someone else. THEN the #2 pet peeve is when you go to switch your clothes from the washer to the dryer and someone has already taken the clothes out and put them aside so they can use the washer. I set my alarm so it is never any longer than 5 minutes that they would have to wait! Haha, sorry I had to vent...
I am getting things ready to leave for the big OD (Odessa), for my baby sister's graduation. I cannot believe she is graduating!! She was my little baby doll when she was born, now she is grown. Even worse...that means it has been 7 years since I graduated! Time flies soo fast. Jeffrey and I were already dating when I graduated, it is so hard to believe everything that has happened since then, seems like yesterday.... (picture of Ivy on the right, so pretty!)







Fish with White Cheese Sauce

2-3 whole White Fish Fillets- I used Tilapia
1/2 onion sliced- I had some shallots so I sliced 2 of those
1 cups sour cream
1 cups Grated White Cheddar Cheese
2 Tablespoons Lemon Juice
1/2 teaspoon Salt
1/2 teaspoon Fresh Ground Pepper


Put Tilapia in a baking pan and sprinkle with salt and pepper.
Put sliced onions over fish.
In a sauce pan mix together sour cream, lemon juice and cheese.

Cook on medium low until cheese melts.
Pour sauce over fish and cook on 400 for 20 minutes.
I served the fish over white rice.

Popovers
1 egg
1 cup warm milk
1 cup flour
3 Tb butter
1 tsp salt
Turn oven to 375. Melt butter and use a brush to 1 Tb of butter into 8 muffin cups. Place muffin tin in oven for 5 mins.
Blend egg.
Warm milk in microwave for 30 seconds, then add to egg and blend for a few seconds.

Sift flour into blender, then add remaining butter and salt. Blend until smooth.
Remove hot muffin tin from oven and pour batter into 8 cups.
Bake on 400 for about 20 mins. Try not to open oven while baking.
I wasn't expecting this fish to be very good, but it had so much flavor! Jeffrey loved the popovers he has eaten most of them already!

Pasta with Tomato Blue Cheese Sauce and Cucumber Water

Mom and I had so much fun this weekend! We did lots of shopping and eating. We went to this gourmet food and restaurant supply store called Surfas. It was so awesome, it put the Sur la Table store to shame! Mom and I were in heaven! We were really good and didn't buy too much, but I did find a great drink dispenser that fits in my refrigerator! I had been looking for one because there is a Mexican restaurant here that serves water with cucumbers in it and I have been wanting to make some for us.
We went to an Italian restaurant in Pasadena on Thursday called Il Fornaio, sooo good! Then Friday night we went to a Greek restaurant in Malibu called Taverna Tony's that looked like were were in the Momma Mia movie. Mom wasn't sure that she liked Greek, because she doesn't like goat cheese and several of the dishes had goat cheese in it. The pita bread and hummus were defiantly my favorite!!

Pasta with Tomato Blue Cheese Sauce

1 Tb Olive Oil
2 Garlic Cloves, minced
1 14 oz can diced tomatoes
1/4 tsp: sugar, salt, pepper, red pepper flakes
1/2 cup blue cheese crumbles
1/4 cup half and half
1/4 cup heavy cream
2 cups fresh spinach
Optional: 1/4 cup jarred Marinara sauce

Cook pasta.

In a skillet heat olive oil, add garlic and cook for 1 minute.

Drain tomatoes then add to pan. Add seasonings.



Stir and cook covered on medium low for about 10 mins.

Stir in blue cheese crumbles.

Stir in cream.

This recipe didn't call for marinara, but when I tasted it I wanted more tomato flavor so I added it and then it was perfect. Cook sauce for 2 more minutes.

Drain pasta.

Add spinach and pasta to sauce. Stir and serve immediately.



This would have been yummy served with Sour Cream Chicken. I am putting these on a menu together next week.

Sour Cream Chicken, Quick and Easy!!

Whoa I have had a boring two days! I got stuck reading a book and finished it in two days. It was the second of the Mark of the Lion Series be Francine Rivers called "Echo in the Darkness." This is a trilogy and I am trying to keep myself from purchasing the third one so that I can get some things done. Still cooking though, the past several recipes I have tried out have been really good. This one was simple and yummy. I think it will become a weekly chicken dish for us.

Sour Cream Chicken
3 Chicken Breast or 7 Chicken Tenders
3/4 cup crushed crackers (any crackers you have around the house will work)
1/2 cup grated cheddar cheese (I used the white cheddar)
1/2 cup sour cream
salt and pepper
Optional: 1 1/2 Tb butter

Put crackers in a bag and use a rolling pin to crush the crackers to fine crumbs.
Mix cracker crumbs, cheddar cheese and salt and pepper into a dish.
Put sour cream into a bowl. Dip chicken into sour cream, then into crumbs and put into a baking dish.
Melt butter in microwave and then pour over chicken.
Cook in oven on 375 for 25 mins.

No need for a sauce, this chicken has lots of yummy flavor!
