Blue Cheese Truffle Chips

Ruidoso Pictures Part 2!
We had a big storm blow through while in the mountains. The night before the wind was blowing like crazy and it knocked the power out from 7pm till 2am! We had a blast chatting by candle light. It got the boys away from the video games and using their creative juices. Timmy and Jeffrey were taking really cool photos, too bad I don't have them to post here.
After the snow we were able to go sledding!! We went last year and it was a blast! This year I even brought my own snow boots!

Ok so here was the low down on dinner number 2: Appetizers: Truffle Blue Cheese Chips and Fancy Skewers, Meal: Soup Sampler of Tomato Basil, Lemon Chicken and Corn Chowder and Custom Fancy Grilled Cheeses.

We ate these chips over Thanksgiving at a restaurant in Salado, TX. They were amazing so I wanted to recreate them. I made them twice for my mom during our first week home and then two times while in Ruidoso. Everyone loves them!!

Truffle Blue Cheese Chips
1 bag of Kettle Potato Chips
1/3 cup balsamic vinegar
2-3 Tb of White Truffle Oil
1/2 container of blue cheese crumbles
Heat balsamic vinegar over medium heat until boils.
Allow vinegar to simmer until it reduces by half (3-5 minutes).
Drizzle truffle oil over kettle chips.
Drizzle reduced balsamic over chips. Use a wooden spoon to stir the chips.
Sprinkle blue cheese crumbles over chips. Serve immediatly!
5 minutes later!!!

Skewar 1: Cantaloupe, Honey Dew Melon wrapped in Prociutto
Skewar 2: Red and Yellow Cherry Tomatoes, Marinated Mozzarella Balls and Fresh Basil. Served with Balsamic Vinegar.
Skewar 3: Granny Apple, Maple Turkey and Brie, served with Honey Mustard.
I love cooking when Mommasita is cleaning!
Katy and Avery were in charge of the grilled cheeses. They took orders of the kind of bread, cheese, meats and fillings for each person, then they cooked them to perfection!
Breads: Sourdough, French, English Toasting Bread and Potato Bread. Cheeses: Provolone, White Cheddar and Colby Jack. Meats: Bacon, Turkey and Ham. Fillings: Red Onion and Apples.
Look at the cute flags they made to identify each person's sandwich!

Every year is so fun to cook with the cousins! I am already starting to think about what to cook next year..
