Scones

I was sooo sick last week! I woke up Thursday morning with extreme pain in my chest. I went to the doctor and was diagnosed with bronchitis. Since I could barely breathe without pain, Jeffrey had to cook dinner for us. Good thing I had a Dream Dinner meal in the freezer! He only had to saute the cooked chicken and vegetables together and heat the tortillas in the oven, but he thought he was big time! I had to take pictures of him, he was hilarious!
He had fun doing it, but I am not sure I can convince him to do it again for a while.

After laying around the house for 2 days, I was bored! I decided to bake! I had all the ingredients for these scones. They were soooo amazing!
Scones


2 cups all purpose flour
1/3 cup sugar
1 Tbsp baking powder
1/2 tsp salt
1 stick butter (cold)
1 cup whipping cream
Stir together flour, sugar, baking powder and salt.
Cut butter into cubes.
Use a pastry blender to cut butter into flour mixture. (Thank you aunt Carol from my handy new pastry blender!)
It should be crumbly, resembling peas. Put flour/butter mix in freezer for 5 minutes.
Remove mixture from freezer and stir in 3/4 cup plus 2 Tbsp of cream.
Do not overwork the dough. Stir only until combined.
Put a piece of parchment paper over a 8" round pan and press dough into pan. Mom gave me this awesome pastry press for Christmas, I really didn't think I would use it, but I have already found many uses for it!
Lift the paper out to remove the pastry from the pan. 
Carefully slice the round into 8 pieces.
Space scones on a cookie sheet.
Use the remaining 2 Tb of cream to brush the tops of the scones.
Bake at 450 for 13-15 mins. 
These are sooo good! You could make many variations such as cranberry-orange, Vanilla, chocolate, Cinnamon, etc.
