Avocado Pesto Pasta

We are having some rainy, cold weather here! On the up side, this week was the first time I was able to wear my new pink coat that Mommasita got me for Christmas. We are very spoiled here with the 80 degree temps we have been having the past several weeks... Tomorrow I am going to my friend Elizabeth's bachelorette party in Palm Springs. It was supposed to be a weekend of laying out by the pool, oh well it will still be fun times!

Here is a yummy pasta. I hope you have a chance to make it soon. This one is going to become one of my regulars!

Avocado Pesto Pasta

1 Avocado
1/2 lemon, plus lemon zest from 1 lemon
2 garlic cloves
1/2 tsp salt
1/4 cup fresh basil
2 Tbsp olive oil
1/2 pound pasta
Parmesan for garnish
Alway zest your lemon before cutting it in half, it makes it easier and reduces the chance of getting nicked by the microplane..... can you tell this has happened to me before!
Cook your pasta.
In a food processory, blend garlic, lemon juice and olive oil.
Next, add avocado, basil, salt and ground pepper. Process until smooth.
You may have to stir the sauce and then blend some more so that you can get it completely blended together.
Stir pasta together with sauce.
Add lemon zest.
Serve pasta in a bowl and top with parmesan and serve immediately. This doesn't keep too long since avocados turn brown quickly.
