Chicken with Sun-dried Tomato Sauce

I made it to the top! J and I went on a lovely hike yesterday. It was a beautiful day and we had a blast! I finally got some alone time with my hubby, no computers, TV, or phones. It was a perfect romantic adventure as I followed in his footsteps and he helped me up and down the rocks. Then he became my hero when he grabbed me as I was about to slide over the edge of a cliff. A romantic, fun, scary and exhausting adventure!

We started very close to the Hollywood sign.
About 5 minutes later... "Ok hunny, it is time to take some pictures." He grumbles but obliges.

Last week I told you I was going to be trying out some new Chicken dishes. This one was so easy! J and I really like the mix of goat cheese and sun-dried tomato, so I knew it would be a hit.

Chicken with Sun-dried Tomato Sauce
4 Chicken Tenders
1 Tbsp olive oil
1/4 cup white wine
1/2 cup chicken broth
2 Tbsp sun-dried tomatoes, chopped
1/4 cup Goat Cheese
salt and pepper to taste
Season chicken tenders with salt and pepper. Cook chicken tenders in olive oil until cooked through.
Remove from pan and set aside.
Add wine and broth to the skillet. 
Cook until reduced by half, stir, scraping at brown bits on the bottom.
Add sun-dried tomatoes to pan and heat through.
Add goat cheese to sauce and stir until melted.
Remove from heat.
Plate chicken, then top with sauce.
I served it with my risotto with mushrooms and truffle oil, yum!
