S'mores Parfaits

Happy St. Patrick's day! I am wearing green, but that is about all the celebrating I will be doing. On Tuesday we were to bring Green themed desserts to our BSF fellowship. I was very tempted to make Pioneer Woman's Grasshopper Pie, but it has alcohol in it and well, I didn't think that brining an alcohol dessert to a Bible Study would be PC. I did have several ingredients on hand to come up with my own dessert, S'mores Parfaits. I just put food coloring in the marshmallow filling so they would fit in with the "green" theme. 
S'mores Parfaits
 My grandmother gave me these tiny parfait glasses for Christmas and I was itching to do something with them! They are so adorable right!? I want to have a soup party and do different soup samplers in them, wouldn't that be fun!?

Chocolate cake mix (or you could use brownie mix)
1 cup whipping cream
24 giant marshmallows (or you could use marshmallow filling)
1/2 cup milk (not pictured)
1 tsp vanilla
4 graham crackers
You do not need butter...

Make the cake according to box instructions.
After cake is finished baking, allow to completely cool.
Melt marshmallows and milk in a saucepan, stirring constantly until blended.
Remove from heat and allow to cool and thicken.
Use one of the parfait glasses and push gently into cake, creating an imprint of the circle. Use a small knife to cut out cylinders of cake. I needed 12.
Put cake on a plate and place in the freezer for about 10 mins.
Whip cold whipping cream until thick.
While cream is whipping, stir food coloring and vanilla into marshmallow mix.
Slowly add marshmallow mix to the whipped cream.
Pretty!
Break up graham crackers in a bowl.
Ready to start filling our glasses!
Cut the cake cylindars in half. Put the bottom half in the bottom of the glass. Save the top halves for the end.
Put marshmallow cream into a gallon bag. Squeeze all the filling to one corner. Cut that corner off.
Quickly pipe the filling into the glasses. (you don't want your warm hands to melt the filling)
Put about 2 tsp of graham cracker crumbs in each glass. Press the top halves of the cake into the glasses.
Keep in the fridge until you are ready to serve!
I had soo much cake leftover. I ate several S'mores "bites" and had a tummy ate....this is why I don't like to make desserts often, I can't keep myself from eating them!!
