Springtime Pasta

I had the day off today and it was great! I slept in, watched Idol and many more tv shows, made myself a nice lunch, then ran some errands. Jeffrey was working all day. I love my husband, but it was really nice to have the apartment all to myself and not feel guilty for vegging out! One day we will want to have a family, but for now I am so thankful that I can have these days all to myself.

This has to be my new favorite pasta salad. It is a good meal to bring in the spring time! I am so ready for all my favorite fruits and veggies to come in season.

Springtime Pasta

1/2 pound of pasta (I like the big shells)
1/2 cup frozen peas
3/4 cups of snow peas
4 radishes
1 carrot
2 green onions
3 Tb of fresh parsley
1/2 lemon juiced
3 sliced bacon
salt and pepper
1/2 cup crumbled goat cheese
Chop radishes into quarters, shred carrot, chop parsley and green onion.
Cook bacon until crispy.
Remove bacon and allow to cool before crumbling.
Cook pasta until almost done, then add peas and snow peas and cook for another minute.
Drain pasta and peas.
Drain bacon grease from pan the bacon was cooked in, then add the pasta to the pan allow with the rest of the veggies. (there will still be some bacon grease residue that will flavor the pasta very nicely!)
Add lemon juice.
Season with Salt and Pepper.
Add crumbled goat cheese and bacon crumbles.
Serve hot or cold. This is amazing! I was soooo excited to eat it again as leftovers the next day.
