Apricot Pistachio Granola and Homemade Trail Mix

Happy Easter! We had a great time this morning at the Easter at the Hollywood Bowl Service. Jeffrey and I met up with Meg, Will and baby Sarah where we had a yummy brunch and enjoyed each others presence as we rejoiced for our savior Jesus Christ! Hopefully next year some our of family can come out here for Easter, they would have loved the service this morning. I didn't take my camera in, so hopefully I can steal some photos from Meg.

My favorite Easter treat, Cadbury Cream Eggs! Only a few left.

This Granola was so yummy. It made the house smell good too. I served it over greek yogurt or just snacked on it plain.

Apricot Pistachio Granola

3 cups rolled oats (not quick-cooking)
1 cup unsalted, shelled pistachios
1/4 cup butter
1/3 cup honey
1 tsp cardamom
1/2 tsp coarse salt
1 cup dried apricots
I used scissors to dice my apricots.
Stir together pistachios and oats.
Melt butter, honey and cardamom in a small skillet.
Stir until completely combined.
Slowly stir butter mixture into oats.

Spread oats onto a baking sheet lined with parchment and put in oven on 300 for 5 mins.
Remove and stir. Place back in the oven for 5 more minutes or until golden. Watch carefully or it will burn.
Allow the granola to cool for 10 minutes then add diced apricots.
Once completely cooled, place in a bag or air tight container.

I also like to make my own trail mix to take to work with me. It is much better than the pre-made kind because you can put only snacks that you like it in and you are not left over with the yucky nuts or crackers you don't like.
My Homemade Trail Mix
Teddy Grahams
Pretzel Fish
Milk Chocolate Chips
Dried Cranberries
Mix in a large bowl and transfer into an air tight container.
