More than a Vegetable Pizza

3 days till Texas! I am almost ready for my best friend's wedding! I worked for a while today on pampering myself so I will be a pretty bridesmaid for Miss Katie Wheeler. I spent the rest of my Sunday baking. I was able to take home some leftover buttermilk from work, so I made some Biscuits and Stuffed Sugar Cookies! Yum!

I am looking for another opportunity to make this amazing pizza again. Maybe for a 3bs' girls night. The girls would appreciate the wonder of this pizza that Protein Boy does not. I mixed 3 different recipes to come up with this pizza! It is the best pizza I have ever made and possibly one of the top 5 pizzas I have ever eaten! The white sauce is sooooo good. It has a caremalized onion sweetness mixed with the amazing cheese...I am thinking up many other dishes to use it on (pasta!). (Just in case you are wondering my all time favorite pizza is Mellow Mushroom's Kosmic Karma Pizza...and there is not a location in Cali...boo) 

More than a Vegetable Pizza

Pizza Dough (I bought Trader Joes pre-made)
3 Tbsp Olive Oil
1 Tbsp Corn meal

White Sauce:
2 Tbsp Butter
1 Shallot
1 Garlic Clove
1/4 cup chicken broth
1/4 cup heavy cream
1 Tbsp flour
3/4 cup Gruyère Cheese
1/4 cup Parmesan
pinch of: salt, pepper, and nutmeg

Toppings:
2-3 Chicken tenders
3 Slices bacon
1/3 cup grape tomatoes
1/3 cup marinated artichoke hearts. quartered
10 Asparagus Spears
1/4 cup Gruyère Cheese
2 Tbsp Parmesan
salt and pepper
1/2 Tbsp Olive Oil

Preheat oven for 500 degrees. Put a cast iron skillet in the 500 degree oven for at least 5 minutes.

Mince garlic and shallot
 Grate Cheese. Set some aside for topping.
 Melt butter in a sauce pot and add shallot and garlic. Cook until golden.
 Stir in chicken broth and cream. Allow to simmer for 1-2 mins.
 Stir in 1 Tbsp of flour and stir for 1 minute or until slightly thickened.
 Stir in Cheese and seasonings then remove from heat.
 Cook Bacon until crispy.
 Grill chicken until cooked through.
 Chop bottom 3rd off of Asparagus.
 Steam asparagus in microwave for 2 mins. Click here to see instructions for steaming veggies.
 Slice tomatoes into 3rds lengthwise.

 Stretch pizza dough out with hands.
Carefully remove cast iron skillet from oven. Drizzle 3 Tbsp of olive oil in the bottom of the pan. Sprinkle cornmeal in the pan. 
 Carefully press dough into skillet. Bake for 4 mins.
 Get toppings all lined up. Drain artichokes of most of their liquid. Drain asparagus. Chop chicken.
 Remove skillet from oven.
 Spread white sauce on dough.
 Layer with your toppings. I did chicken, tomatoes, artichokes, bacon, asparagus, and cheeses. Sprinkle with salt and pepper, then drizzle with olive oil. Bake for 7 mins.
 Put under the broiler for 2 minutes. Remove and let cool for 3-5 minutes.
 Carefully slide pizza out of skillet and onto a cutting board to cut into 8 slices!
Again....I can't wait to make this again!
