Stuffed Sugar Cookies

We are home!! I am excited to be back in Cali but sad to not be on vacation anymore. Jeffrey got into his relaxed vaca mode and it was so nice to have him all to myself, without interference from work! 
The wedding was fantastic! Katie look beautiful. It was such an honor to be part of the wedding! Here are some fun photos from the weekend.

I loved these cookies! They are the best I have ever made! Just the sugar cookie recipe without the rolos would be perfect! I took the extras to Texas and we ate them at our dance party in the hotel room, so yum!

Stuffed Sugar Cookies
2 3/4 cups flour
1 tsp baking soda
1/2 tsp baking powder
1 cup butter (2 sticks, only one is pictured here)
1 1/2 cups sugar
1 egg
1 tsp vanilla
3 Tbsp buttermilk
2 packages of rolos or whatever candy you want stuffed inside
Sift together flour, backing soda, and baking powder.
Melt butter.
Add sugar to butter and whisk for 5 minutes or until thick and creamy. 
(I think next time I will do this in my kitchen aid mixer..)
Whisk egg into sugar mixture.
Whisk vanilla into sugar mixture.
Slowly add dry ingredients to sugar mix.
Incorporate buttermilk into dough.
Now eat some cookie dough!
Use an ice cream scoop to spoon out dough onto flat surface.
Divide in half and press into two circles.
Place rolo onto one circle and top with the other circle.
Squeeze edges together and place onto baking sheet.
Bake on 375 for 9-11 minutes, or until golden. I switched my trays halfway.
Cool on baking racks for 10 mins.
