I am going to the Grove today! Love that mall! I have lots of birthday's coming up and I need to do some shopping. I also want to find some summer shorts. I used to have several pairs, but they have disappeared?? Lets hope I find what I am looking for!
I saw these on Julia's Healthy Italian Cooking Blog and wanted to try them. I have made stuffed artichokes before but you always have to boil them, then stuff them, then baked them and it ends up being so much work for not enough pay off. These were delicious! Even J noticed that they were cooked different and loved this new way. I even caught him bragging to one of his friends about the yummy artichokes I made him...haha that friend probably didn't even know what an artichoke was! PS These take an hour to cook so start early!
2 large artichokes
4 tsp chopped garlic (I actually like using the pre-chopped kind on this dish)
1 cup water
1 Tbsp chicken soup base or 1 chicken bouillon cube
2 Tbsp chopped parsley
Hard Italian cheese (I used Parmesan)
salt and pepper
Cut the top 1/3 off the artichoke. Chop off the stem and then use scissors to cut the sharp tips off the other leaves.
Spread apart the leaves of the artichoke.
Cut off some slices of cheese to stuff into the artichoke.
Stuff cheese into artichokes. Then spread garlic over the artichoke and stuff into leaves.
Two artichokes fit into a loaf pan perfectly!
Drizzle about 1-2 tsp of oil over each artichoke.
Salt and pepper tops.
Put chicken soup base and water in the pan.
Top with parsley. Cover the pan with foil and bake on 450 for 1 hour.
Remove foil and serve.
I like to serve with my creamy lemon-dill dressing...YUM!
