Roasted Salsa

Disneyland was incredible!!! Meg took a ton of pictures on her phone, but it may be a week or so before I get them, so I will wait to update you when I have pictures. I can't wait till I can experience the magic all over again!
Jeffrey LOVES chips and salsa. He really just loves chips and dip...even if i don't have salsa for him he will substitute it for BBQ sauce, marinara or Franks Red Hot... weird, I know! I have been making this other recipe for so long that I am tired of it, so when I found this new Roasted Salsa recipe, I was excited to try it! It was great!
Roasted Salsa
2 large tomatoes
1 small white onion
3 jalapeños
3 garlic cloves
3 Tbsp lime juice
1/8 tsp cumin
1/4 tsp salt and pepper
1/4 cup fresh cilantro

Heat broiler to high. Slice onion in half and remove paper skin. Slice and seed jalapeños, leave paper skins on garlic.
Place jalapeños, onion and garlic on a pan. Put under broiler and cook for about 8 minutes, turning veggies halfway.
Remove garlic and jalapeños and place pan back under broiler for 8 more minutes (watch carefully, remove if begins to burn).
Remove skins from garlic.

Allow tomatoes and onion to cool for 10 mins.
Cut stems off tomatoes.
Blend tomatoes, onion and jalapeños. 

Add juice
Salt, pepper and cumin
and cilantro, then blend until smooth.
Store in an airtight container.
