Fiesta Chicken Bundles

Fourth of July is my favorite holiday! I LOVE the BBQs and fireworks. I used to go to a parade every year a tradition that my sister and I would do together. Last year I made Jeffrey go with me to one in Santa Monica, but it just wasn't the same without Ivy. Maybe next year she will be here for my favorite holiday and we can try out a new parade.

I have had this on the menu for a few weeks, but just couldn't get inspired to make it. When I finally did, I was pleasantly surprised! It was fantastic! I am actually making it again tonight.

Fiesta Chicken Bundles
5-6 chicken tenders
2 1/2 corn tortillas
1 cup shredded pepper jack cheese
3/4 cups salsa verde, divided
1/2 cup cornmeal
1 tsp garlic
1/2 tsp salt
2 Tbsp vegetable oil
1/4 cup water
2 Tbsp orange marmalade
1/2 tsp chili  powder
2 Tbsp sour cream
1 Tbsp chopped cilantro
Grate cheese.
Chop corn tortillas into small bits.
Mix corn tortilla bits with cheese and half of the salsa verde.
In a shallow dish, mix cornmeal, salt and garlic powder.
Mix water with orange marmalade, chili powder and the remaining salsa verde.
Pound chicken until even thickness.
Spoon tortilla mixture down each chicken tender. Roll up and secure with toothpicks.
Coat each chicken bundle in cornmeal mix.
Brown chicken tenders in hot oil.

Pour salsa mixture into pan and bring to boil.
Bring to boil and turn down heat to medium. Cover and set timer for 15 minutes.
Serve with a dollop of sour cream and some cilantro.

Have you ever made this using cracker crumbs instead of corn meal? I can't stand the texture of corn meal and was looking for an alternative, but didn't know how soggy it would get using cracker crumbs.

Hey Michele,

I think crackers would get soggy. What about using crushed tortilla chips?
