Tomato Tortellini Salad

My hubby has stomach issues. I will not get into details, but they have been consistent for years! We have tried everything from dairy free diets, to seeing a gastrologist. The doctor just thought it was stress, but we were not convinced because nothing improves when he is not stressed. It was our last resort, but after talking to a lot of people who are gluten free we decided that we need to try it. Sooooo I have started switching to a lot of gluten free items for him (not me, are you kidding I love bread and pasta too much!). But it does mean I will be making less pasta dishes, therefore I am devoting the next 3 blogs to pasta dishes I made before the "gluten-free," switch. Here is a great summer pasta salad, easy and refreshing! PS: I will keep you updated on how the gluten-free diet is working for him.

Tomato Tortellini Salad
1 package of Tortellini
1 tsp. Worcestershire sauce
1 corn cob
1 cup baby heirloom tomatoes
3 Tbsp. lemon
1/4 cup basil
2 green onions
1 garlic clove
1/2 cup parmesan
1/3 olive oil
Blend olive, lemon, Worcestershire, parmesan, salt and pepper.

Half tomatoes, chop green onions and basil. Cut corn off cob.
Cook tortellini according to package directions. Stir sauce into tortellini.
Stir pasta into veggies. Season with salt and pepper.
Top with parmesan.
