Yesterday was my birthday and it was a good one!! One of my co-workers brought me a homemade ginger cake, soo yummy and nice of her. I talked to some of my very favorite people and opened several sweet cards. Then my hubby out did himself by sending me flowers and giving me this new watch and adorable shirt from JCrew.
For dinner, my mom put money in our account and we went to a place called Sushi Roku where I had the best sushi of my life! I don't eat sushi enough to know what to order, so we let our waiter bring out whatever he suggested. When we were done with one plate we would say "ok what is next?" and he would bring out another fantastic dish! We ate 6 plates of food and a few bites of our free dessert and I am still full today!! Hopefully we can go back to that restaurant before my next birthday....come visit us and we will go there!!!
Some more Buffalo Chicken for your menu! As you know, I love Franks Red Hot so anytime I see a new recipe, I try it. This was good, but I want to try it again using actually cornflake crumbs.
Buffalo Chicken Roll Ups
4-6 chicken tenders
salt and pepper
1/4 cup blue cheese crumbles
1/4 cup frank's red hot
2 Tbsp mayo
1 cup crush cornflakes (I used gluten free corn chex for Jeffrey)
Stir together mayo and frank's red hot.
Crush chex or cornflakes.
Flatten chicken with meat hammer.
Season chicken with salt and pepper. Spoon blue cheese on chicken tender. Roll up the chicken and close with a toothpick.
Dip chicken rolls in Frank's Red Hot mixture then roll in chex crumbs.
Set in a baking pan and bake on 400 for 30 minutes.
Serve with extra hot sauce!
