Oh man...Pinterest is addicting! I joined last night and have been on it for several hours this morning. I am still trying to figure out how it all works/how you find people to follow. I found this corn recipe on the Tasty Kitchen Blog. I already had a similar recipe on here using lime, corn and feta so I wasn't planning on writing about it. After I made it I knew I would need to blog about it. When I was in Odessa I made it for my family and they loved it too. I think it is Jeffrey's new favorite corn.
Chipotle Lime Corn
2 ears of corn
3 Tbsp butter
1 chipotle in adobe sauce
1 green onion or 1/2 tbsp chopped chives
zest of 1 lime
1 Tbsp kosher
1/2 cup feta
Zest lime and stir it into salt.
Chop green onion
Melt butter and stir chipotle and green onion into butter.
Roast corn on grill or if you have a gas burner you can roast on the fire.
Create a bowl of feta and cut the corn off the cob and put in a bowl. Spoon corn on your plate topped with feta, butter and lime salt! Sooooo good!!!
