Chipotle Lime Corn

Oh man...Pinterest is addicting! I joined last night and have been on it for several hours this morning. I am still trying to figure out how it all works/how you find people to follow. If you know how, try to find me! Coming up soon, the hubby will be leaving town for a whole month on location for work. Now I will have lots of craft projects to keep me busy!

I found this corn recipe on the Tasty Kitchen Blog. I already had a similar recipe on here using lime, corn and feta so I wasn't planning on writing about it. After I made it I knew I would need to blog about it. When I was in Odessa I made it for my family and they loved it too. I think it is Jeffrey's new favorite corn.

Chipotle Lime Corn
2 ears of corn
3 Tbsp butter
1 chipotle in adobe sauce
1 green onion or 1/2 tbsp chopped chives
zest of 1 lime
1 Tbsp kosher
salt
1/2 cup feta

Zest lime and stir it into salt.

Chop chipotle
Chop green onion
Melt butter and stir chipotle and green onion into butter.

Roast corn on grill or if you have a gas burner you can roast on the fire.
Create a bowl of feta and cut the corn off the cob and put in a bowl. Spoon corn on your plate topped with feta, butter and lime salt! Sooooo good!!!
