I made this a long time ago, along with my Steak and Eggs dish, but it got stuck way down in my list of blogs and I found it yesterday! It is yummy, especially for this time of the year when Apricots and Peaches are sooo good! I just had a peach for breakfast, perhaps I will have another one in this salad for dinner!
Grilled Apricot Salad
2 Tbsp Balsamic Vinegar
3 Tbsp Olive Oil
1/4 tsp salt and pepper
2 Apricots or 1 peach
1/2 Tbsp olive oil
2 oz pancetta, sliced thinly (whoa! I forgot this part when I made it! I am definitely going to have to make it again to put this in...that's why I had bought that pancetta...!)
toasted hazelnuts (I used walnuts), Toasted
Chop shallots fine.
Stir together balsamic and shallot, then slowing stir in olive oil. Season with salt and pepper.
Drizzle grill pan with 1/2 Tbsp olive oil and grill apricots for 1-2 minutes on each side.
Remove and set aside.
Toss all salad ingredients with dressing. My walnuts were already toasted so do that if yours are not.
