Farewell Breakfast - Drop Biscuits and Egg

The whole week before J left, he was out working late every night so we didn't get to have dinner together. On Labor Day (the day before he left), I decided to make us a sit down breakfast. I am not a huge breakfast fan, but you can't go wrong with homemade biscuits!
The morning he left, we drove down to San Clemente to do a last minute location scout for his last day of shooting when they return. We left at 4:30 in the morning and got there right after the sun came up. It was sooo beautiful. The fog coming off the ocean made it feel surreal. Here is a picture of my hunny walking in the sand.

Farewell Breakfast - Drop Biscuits and Eggs
1 cup plus 2 Tbsp of Flour
1 1/2 tsp baking powder
1 1/2 tsp sugar
3/4 tsp kosher salt
1 cup heavy cream
1 Tbsp melted butter
Preheat oven to 400.
Sift together flour, baking powder, sugar and salt.
Slowly, stir in cream.
Dough should be slightly sticky. If it seems dry, add a little more cream.
Use a 1/4 cup measuring cup to scoop the dough onto a baking sheet. It will make about 6 biscuits.
Brush melted butter on top of each biscuit. Bake for 18-20 minutes. It should be golden on top and bottom.
While biscuits bake, make eggs. I usually like scrambled eggs, but decided to make over easy eggs to scoop up the yolk with the biscuits! Melt butter in pan and carefully break eggs into pan. You don't want to break the yolk! I do carefully flip my eggs and cook on both sides, I can't eat eggs that rare...yuck!
Yum! Allow the biscuits to cool at least 5 minutes. (they are very crumbly)
I served our biscuits and egg with peaches, strawberry jam and butter. YUM!
I think I sent my hubby off well. I know he is missin' my cookin'!
