Sole with Lemon Brown Butter Sauce

Yeah, I got through the first 10 days without my hubby. I am sooo excited to go to Texas tomorrow and see my family. It will be so fun to cook with my mom while at the ranch. I will be bringing home lots of yummy recipes for the blog! 

I have been trying to step outside my box and try different fish. Sole was so good, but anything can be good with lemon and butter.

Sole with Lemon Brown Butter Sauce
2 sole fillets
2 Tbsp olive oil
kosher salt
1 cup flour
3 Tbsp butter
1 1/2 sprigs of fresh thyme
1 Tbsp lemon juice
2 Tbsp fresh chopped parsley
Chop thyme and parsley, juice lemon. Have all ingredients ready to throw in when ready!
Season sole with salt then dredge in flour. (I had 2 fillets, but 1 was really big so I cut it in half)
Heat oil in skillet, then place fish in hot oil. Cook for 2 minutes on each side.
Remove fish from pan and remove excess oil. Add butter to pan with thyme.
When butter is melted and very bubbly add lemon to pan and whisk.
When the butter becomes nutty brown, add parsley and season with salt.
Serve sauce over sole. I made this with the Wilted Greens and Crispy Goat Cheese
